Mississippi Mud Coffee Roasting

Mississippi Mud is a Coffee Roaster local to Saint Louis.  It is located near the Mississippi River off Cherokee Street in Saint Louis.MM

In the days of old, the first roasted coffee beans were roasted over a fire. Currently many coffee roasters use special techniques such as air roasting or micro roasting. Getting back to the basics is Mississippi Mud, which is a coffee roaster famous for their fire roasted coffee beans.  For roasting, they select some of the highest quality beans grown in places such as Columbia, Ethiopia, Kenya, and more. In their roasting process, they use a hand crafted drum roaster. This roaster uses fiery heat to roast the coffee beans, bringing out the true flavors of these beans from all over the world.

After the beans are roasted, Mississippi Mud combines the beans into a variety of different blends. Their original blends include “Mississippi Mud”, “Up All Night”, “Cafe Blend”, and “French Roast Chicory.” They also have other blends such as “Mocha Java”, “French Roast”, “Italian Roast”, “1895 Blend”, and a variety of decaf blends.

MM2   Mississippi Mud fights social injustice by purchasing their beans only from places that are fair trade certified. After the beans are roasted and made into their different blends, they can be bought at a number of different places. They sell coffee at wholesale to many different places such as grocery stores, hotels, independent coffee shops, restaurants, universities, and more. The owner of Mississippi Mud, Christopher Ruess, made a franchise deal with some owners of a local coffee house on Cherokee St, resulting in the café Mississippi Mud House, which serves only Mississippi Mud coffee. It was a brilliant collaboration since the coffee house and the roaster are on the same street.

Mississippi Mud Coffee House is a great coffee house known for its fire roasted Mississippi Mud coffee and wonderful breakfast and lunch menus.  There drip coffee and chia lattes are sensational.  Their tasty breakfast and lunch menu items are available at all hours the shop is open.

Mississippi Mud is a great place to buy freshly roasted coffee. It is also a great place to go for breakfast, lunch, or brunch. It has a nice homey feel to it and the workers are very friendly. The interior is lovely. It has free Wi-Fi and accepts credit cards.

Chauvin CoffeeCC

Chauvin Coffee is a local coffee roaster that was established in 1930. It is located in St. Louis off if Meramec Street.

Chauvin Coffee Company roasts their coffee in four different varieties.  They roast from “lighter to darker, beginning with Medium Roast (City), to Full City, to French Roast, to the darkest, which is Italian Roast”.  Espresso roasts varies from little more than “Medium Roast” to slightly darker than French Roast.  But most of their coffees are done in a Medium Roast unless informed otherwise.

The coffee is micro roasted in small, individually controlled batches, in three different size drum roasters.  The three different sizes consists of a 15, 30, and a 120 kilo roasters.  Appropriate roasting size is depended on the demand for a particular coffee. They use different size roasters to roast only enough coffee to meet their immediate needs so the coffee is most fresh when served.  The 30 kilo roast is refurbished Italian Vittoria, which is more than 50 years old.  The newest roasts, of 15 and 120 kilo capacity were acquired by “STA Impianti of Bologna, Italy”.  To maintain more uniform roast, the roast temperature is lowered more than the other roasters and allowing the coffee to fully develop the flavor. This method was developed after several years of research and visiting various operations.  They felt, this method would give them the best and most consistent roasts.

Chauvin Coffee has four different degrees of roasts: Medium, Full City, French, and Italian. Medium is the standard roast, where the beans turn reddish brown in color.  The oil on the surface of the bean is not visible.  “This roast best characterizes the balance of acidity, flavor and taste of the coffee itself.” Full City is their dark roast or Viennese.  This roast is darker than Medium roast.  In this CC2roast the natural oils are just beginning to show on the surface of the bean.  “The flavor and body is more intense than the medium roast.” This coffee is recommended for either drip or French press methods. French is a heavy roast with a “caramelized taste”.  “The individual varietals and bright acidity characteristic of coffee has been replaced with a heavy taste that stays on the palate.” This method of roasting causes the natural oils to develop short time after roasting is complete. Italian is their darkest roast, with heavy intense lingering flavor, and the taste is almost smoky.  At the end of the roast, the coffee oils appear on the beans due to longer roasting period.
Chauvin Coffee sells the coffee by the cup or the bean at the store, and also at some retail locations or online.  They can help you find these locations by giving them a call or an email.  They also offer “8, 12 or 16 ounce retail packaging in the same type valve bags as [their] larger bags, available in the following colors: Black, Blue, Copper, Forest Green, Gold, Purple, Red, Silver and White.”

Chauvin acquires their coffee from 23 different equatorial nations.  100% Colombian Supreme is used as a base for all of their flavored coffees, and all are available in decaf as well.  “A Blend is basically two or more different Origin beans blended together in varying quantities to produce a desired end result. Different degrees of Roast can be blended together as well.”  Because they acquire their coffee from many different nations, they have many options for blends.  Any number or combination of coffees we offer can be used for espresso.  The possibility of many combination blends, Chauvin accepts suggestion.

Shaw’s CofeeSC

Shaw’s Coffee was established in 1999, it located on the hill off of Shaw Avenue.

The type of roasting that is done here is micro-roasting; We actually were lucky enough to get a one-on-one explanation of the roasting process from one of the employees.  The beans enter the roaster when they are green and the temperature is raised to about 450 degrees.  The roasting employee waits until the heat equally saturates the internal roaster and then drops the beans all the way into the roaster.  The type of roaster at Shaw’s Coffee has a little glass door through which the beans can be seen bouncing around.  The beans are left in the roaster for 15 to 20 minutes, with a general rule of roasting about one minute per pound.  All of the beans, with the exception of a couple blends, are sold by a single origin.

Shaw’s coffee prides themselves on not wholesaling or discounting coffee beans.  The freshly roasted coffee is only available at the online store or at the cafe itself.

The coffees are dark-roasted in the European style.  This is the type of roasting that is most common on the West Coast.

Shaw’s Coffee imports Arabica coffee beans from the Americas, the Pacific Rim, and Africa.  This coffee roaster offers 25 different beans from multiples areas of the world.  They offer varieties that are regular, decaf, regular-organic, water-processed decaf, and organic water-pressed decaf.

This roaster has an excellent cafe with a wonderfully inviting vibe.  There are two rooms that always seem to have the perfect amount of sunlight and perfect seating.  Every Saturday in this cafe John Chiecsek, a local musician, performs for the coffee shop clientele.  The other perk Shaw’s Coffee offers its customers is the ability to take coffee grounds home for their respective gardens.  Coffee grounds contain chemical elements that successfully assist plant growth. It is fairly affordible and offers free Wi-Fi and accepts credit cards for your convenience.

STL Cofffee Raosters is a local roaster established in 1999 that sells traditional coffee and coffees based off of Middle Eastern flavoring traditions.

The owners of this roaster learned how to roast coffee from an Italian roaster.  They use the methods they learn while roasting their coffee beans in Highland, Illinois.

Roasting Process:  This roaster prepares their coffee in small, controlled batches.  The roaster guarantees their coffee with a full refund policy.

This roaster sells coffee beans that range anywhere from mild to bold.  These beans are sourced mainly from the South Americas.  They offer single-origin roasts as well as privately blended coffee bean packs. These beans are available in the store as well as on the website. The green Arabica beans are imported from the Philippines, Brazil, Colombia, Costa Rica, Sumatra, and Guatemala.
